Maitake is a type of healthy mushrooms that are sold in healthy grocery stores.

I really like the taste of Maitake Mushrooms, if you cannot find Maitaki mushrooms, try white button or cremini mushrooms instead.

Ingredients needed:

  • Fresh Organic Maitake Mushrooms (if not available, you can use fresh organic cremini mushrooms instead; however, using Maitake mushrooms would create much better taste.)
  • Yukon Gold Potato
  • Mexican Blend Shredded Cheese
  • Flour Tortilla
  • Organic Canola Oil
  • Salt Red pepper flakes (optional)
  • Avocado (optional)
  • Salsa (optional)
  • Cilantro (optional)

Preparing and Cooking Potatoes
Usually, it takes a long time to cook potatoes, so I found a quick way to cook potatoes.

Skin the Yukon Gold potato (or leave the skin in if you like the skin), cut the potato into small cubes and pour it in a microwave safe dish, then add salt and organic canola oil, steer it, put it in the microwave and cook it for 4-6 minutes depending on the amount of potatoes and your microwave power. You can check after 4 minutes - the potatoes should be cooked about 3/4 of the way, you can put a knife in it but its not fully cooked.

Set the burner to medium, pour organic canola oil to a pan and let the oil reach warm, but not very hot temperature (about 350F), pour the potatoes that was 3/4 of way cooked in the pan, and steer a few times while cooking it for about 5-6 minutes.

While the potatoes being cooked, cut the fresh maitake mushrooms into pieces. (I use organic maitake mushrooms because I do not want to wash them - washing mushrooms making them soggy and the dish will not taste good), then I add the mushrooms and red pepper flakes to the potatoes when the potatoes are almost cooked, and steer mushrooms and potatoes and let them cook for another 2-3 minutes. (overcooking the mushrooms makes them rubbery so 2-3 minutes of cooking should be sufficient for maitake mushrooms.)

Once the potato and mushrooms are cooked and still hot, pour it in a plate and add Mexican blend shredded cheese and let it melt.

Then put to the flour tortilla in the toaster over and let it cook, once hot, then pour the cooked potatoes, maitake mushrooms and shredded cheese on top of tortilla, add more cheese on top of it if you like.

Now you have a very tasty Maitake and Potato Burrito.

As optional add-ons, you can add your favorite salsa, avocados and cilantro to the burrito and enjoy.
